What you need

green cardamoms

tsp black peppercorn

tsp cumin seed

tsp fennel seed

bay leaves

cup onion
green chilli

tsp ginger garlic paste

tsp salt

tsp red chilli

tsp coriander powder

beetroot

tsp sugar

tsp vinegar

cup water
cup mint leaves

cup fresh coriander leaves
Instructions
1: Wash the rice and soak for 15 minutes. Meanwhile, prepare the rest of the ingredients. 2: In a pressure cooker, heat ghee and add all the whole spices. 3: Add the onion and green chilli, then sauté until the onion turns translucent. 4: Add the ginger-garlic paste, red chilli powder, coriander powder and salt. Sauté for 2 minutes. 5: Add the beetroot, mint, coriander leaves, sugar and vinegar. Sauté for a minute. 6: Add the rice and water. Mix and pressure cook for 2 whistles, turning the heat to low after the first whistle. 7: Fluff up the rice and serve warm with raita.View original recipe
