What you need

tsp cinnamon powder

fl oz coconut milk

tbsp water

egg yolk

tsp ground nutmeg

oz butter

oz ghee
Instructions
1: In a bowl whisk the egg yolks and 250 gms of sugar, add the powdered spices as well. 2: Alternatively add the flour and coconut milk to make a smooth batter. 3: Finally add the melted butter and ghee and whisk well to combine. 4: Divide the batter amongst 3 bowls. 5: Take the reserved 200 gms of sugar and add it to a saucepan, add a little water and caramelize the sugar until golden brown. 6: Transfer this caramel to the bowls of batter in different ratios for varying colors. Now you should be left with 3 colored batters. 7: Grease and line a baking pan with parchment paper. 8: Pour each batter in a fixed sequence and bake for 5 mins in between each addition. 9: Continue the process until the batters are over, making sure to add equal quantities of each to get even layers. 10: Bake for 20 mins after adding the last layer. 11: Allow the dessert to cool for an hour at least before de-molding and slicing.
