What you need
green chilli
cup mint leaves

cup fresh coriander leaves

cup ghee

in cinnamon

clove

cardamom

star anise
bay leaf

tsp black peppercorn

onion

tbsp ginger garlic paste

tsp turmeric powder

tbsp coriander powder

tsp garam masala

tbsp salt

lb chicken

Instructions
1: Wash and soak the rice for 20 mins. 2: Combine the mint, coriander, green chillies, and a squeeze of lemon to make a fine green paste. 3: Heat ghee in a pot, add the whole spices and fry until aromatic. 4: Add the onions and fry until golden brown. 5: Add the ginger, garlic paste and cook until the raw aroma goes. 6: Add the green paste and cook for about 3 mins. 7: Add the powdered spices and the salt. Cook for a minute. 8: Add the chicken and cook for 5 mins, until it releases water. 9: Add the water and bring to a boil. 10: Add the rice and simmer until the rice and water reach the same level. 11: Add extra chopped mint and coriander leaves. 12: Use a banana leaf to sit on the top and then place a fitting lid with some weight, and dum cook for 12-15 mins on a preheated tava/low flame. 13: Allow it to rest further for 10 mins. 14: Open the pot and gently break the dum. Add some extra ghee on top and serve hot with raita in a donne.View original recipe
