What you need

bunch curry leaves

tsp turmeric powder

tsp coriander powder

tsp cumin powder

tbsp ginger garlic paste

tsp garam masala
green chilli

oz chicken liver

tsp fennel seed

cup shallot
tsp red chili powder

tsp black pepper

tbsp fresh coriander leaves

fl oz sesame oil
Instructions
1: Marinate the chicken liver with all the marination ingredients for at least 15 minutes. 2: Heat gingelly oil in a pan and add fennel seeds. When they start to splutter, add curry leaves, green chilli, and shallots. 3: When the shallots turn translucent, add the ginger garlic paste and sauté until the raw smell disappears, around 1-2 minutes. 4: Add the marinated chicken liver and sauté on high heat for 2 minutes. Reduce the flame to medium and continue cooking for 8 to 10 minutes or until the liver is cooked. Keep stirring occasionally. 5: Finish with black pepper powder and coriander leaves.
