Bun Butter Jam

Deliciously soft buns made with mashed potatoes, egg yolks, and golden raisins, paired with a fruity jam made from a mix of berries and tropical fruits.

What you need

cup sugar

tsp salt

egg yolk

cup golden raisin

orange
cup potato
guava

oz fresh pineapple
dragon fruit

oz sweet cherries

cup butter
oz fresh blueberries

apple
egg

tbsp strawberry sauce

kiwi fruit
tbsp warm milk
Instructions
1: In a mixing bowl add milk, sugar and yeast, give it a good mix and let it bloom for 5 minutes (you’ll start seeing bubbles forming on the surface of the mixture). 2: In a mixing bowl add the egg yolks and mashed potato along with the bloomed yeast. 3: Give it a good whisk and sift in the flour knead the dough until it’s smooth. 4: Add the softened butter and golden raisins, and knead until the butter is thoroughly incorporated and the dough is smooth. Add flour and knead if necessary. 5: Let the dough rise for 2 hours and or until doubled in size. Punch down the dough and shape it into buns of your choice and let it proof for 30 minutes or until 1 ½ in size. 6: Give the buns an egg wash and bake them for 10-15 minutes at 180-degree Celsius. 7: Once fully baked, brush it with butter while still hot so that the bun stays soft. 8: Let it cool down completely before cutting into it. 9: For the jam, blend all the fruits until smooth. In a kadhai add the blended fruits and cook on a moderate flame until it becomes thick (around 5 mins). Add the sugar and mix until it dissolves. Cook the mixture on a moderate flame until it becomes thick and you achieve a jam consistency (around 5 mins). 10: Cut the buns in half and apply the jam and butter.View original recipe
