Watermelon Peel Curry

A delicious and unique curry made using the rind of watermelon. The peel is marinated with spices and cooked with various ingredients like peanuts and tomatoes to create a flavorful dish that's best served with chapathi or rice.

What you need

tsp ginger garlic paste

tsp salt

tsp turmeric powder

tsp red chilli
tbsp oil

cup peanut

tsp mustard seed

tsp cumin
dried chilli

tbsp garlic

cup onion

curry leaves

tsp coriander powder

tsp red chilli

tsp salt

cup tomato

cup water

tsp garam masala

tbsp fresh coriander leaves
Instructions
1: Peel the green outer skin of the watermelon rind and cut it into cubes. 2: Marinate the watermelon rind with ginger garlic paste, salt, turmeric powder, red chilli powder, and curd. Set aside. 3: Heat oil in a pan and add the peanuts. Fry on medium-low heat until golden brown and set aside. 4: In the same pan, add mustard seeds and cumin seeds. Once it crackles, add dry red chilli and garlic. Saute for around 30 seconds. 5: Add onion and curry leaves. Saute until the onion turns translucent. 6: Add coriander leaves, red chilli powder and salt. Saute for a minute on low heat. 7: Add tomato and saute for 3-4 minutes until it softens. 8: Add the marinated watermelon rind and mix well. Cover and cook on medium heat for 15 minutes, stirring occasionally. 9: Add water and bring to a boil. 10: Add garam masala powder and mixed coriander leaves and fried peanuts.
