star anise

in cinnamon

garlic

in ginger

tsp ground black pepper
green chilli

red chilli

tbsp honey

oz boneless chicken thighs
tbsp oil

tbsp vinegar

tsp corn starch

tbsp water
Instructions
1: To a pan on medium flame, add the soy sauce, oyster sauce, star anise, cinnamon and whole black peppercorn. 2: Add the slit chillies and grate in the garlic and ginger. 3: Once the mixture comes to a simmer, add in the honey and stir. Let it come to a boil and switch off after 1 minute and let it cool. As the sauce cools, it should thicken. 4: Once the sauce has cooled sufficiently, add it to the chicken thighs and allow to marinate for at least 10 minutes. 5: Once marinated, heat a wide saucepan over medium flame and add the chicken to sear, reserving the marinade. 6: Once the chicken is 90 percent cooked add in the marinade and let it cook for 5 minutes. 7: Mix the cornstarch with water to make a slurry and add it to the pan while mixing. The sauce should thicken considerably. 8: Garnish with toasted sesame seeds and spring onion. 9: Serve with steamed rice.View original recipe
