What you need

oz penne pasta

cup vodka

cup tomato puree

cup mozzarella cheese

cup onion

tsp salt

tsp red chilli flakes

fl oz water

tbsp olive oil

tsp sugar

tsp black pepper
cup pasta water

tsp italian herb mix

tsp paprika

cup cream
Instructions
1: Bring a large pot of boiling water. Season with salt and add the pasta. Boil for 7-8 minutes or as per package instructions. 2: Reserve some of the water for using later in the sauce. Strain the pasta, toss with oil, and set aside. 3: Heat olive oil in a pan. On medium heat, saute sliced garlic and red chilli flakes until the garlic starts to brown slightly. 4: Add onion and saute until translucent. Add the vodka, stir well and allow it to evaporate. 5: Add the tomato puree, salt, red chilli powder, and black pepper powder. Cook for 5 minutes, stirring regularly. 6: Add the reserved pasta water and Italian herbs. Bring it to a simmer. 7: Add the fresh cream and stir. Add the pasta and the grated Mozzarella cheese.
