What you need

tsp dried thyme

tsp dried rosemary

tsp dried basil
tsp dried oregano

tsp cumin powder

tsp turmeric powder

tsp garam masala

tsp salt

tbsp tomato paste

fresh coriander leaves

Instructions
1: In a pan pour oil and add all the dried herbs, carrot, onion and leeks, sauté until aromatic and add the tomato paste. 2: Cook until the raw flavour disappears and add potatoes to give it a good mix. 3: Add all the masalas and sauté, once they turn aromatic add the lentils and give it a good mix. 4: Pour water, cover and simmer for 20 minutes, once the lentils turn soft add spinach and cook until they wilt. 5: Garnish with coriander leaves and serve hot.View original recipe
