Kerala Onion Vada

Kerala Style Onion Vada is a perfect tea time snack made with thinly sliced onions, curry leaves, ginger, and a blend of spices. It's a delightful monsoon snack, crispy on the outside and flavorful on the inside.

What you need
green chilli

tbsp rice flour

tsp turmeric powder

tsp salt

onion
fl oz oil

tbsp ginger

bunch curry leaves

tsp fennel seed
tsp red chili powder

tsp garam masala
Instructions
1: To a bowl, add the onion, curry leaves, ginger, green chilli, fennel and salt. Rest for 10 minutes. 2: It will start to release moisture. Add turmeric powder, red chilli powder, sugar and garam masala powder, and mix. 3: Add the rice flour and maida and mix. Add the maida one tablespoon at a time. Add more if the mixture is still too wet, and is not holding shape. 4: Heat oil to medium-high heat. Shape the onion mixture into balls, around the size of a large lemon. Fry for 3-4 minutes. Remove from the oil when the colour just starts to turn light golden brown. 5: Turn the oil temperature up to high. Add the cooled Vada and fry again until it turns a perfect golden brown.
