Coconut Banana Peel Curry

What you need

tbsp coconut oil

tsp mustard seed

tsp fennel seed

tsp cumin seed
green chilli

curry leaves

onion

tsp ginger garlic paste

tomato

tsp turmeric powder

cup water

cup coconut extract

tbsp fresh coriander leaves
Instructions
1: Cut the banana peels into strips. 2: Soak the peels in hot water for 10 minutes. 3: Heat a pan and add coconut oil. 4: Add mustard, cumin, fennel, green chillies, curry leaves and let it splutter. 5: Add the onions and saute till they turn light brown. 6: Add ginger garlic paste and saute for a few seconds. 7: Add tomatoes, turmeric powder and saute till tomatoes become soft and mushy. 8: Add the banana peels and saute for 2 minutes. 9: Add water and bring it to a boil. 10: Cover and simmer the mixture for 10 minutes. 11: Open the pot, add the coconut paste and mix till it combines and thickens. 12: Season the curry, add coriander leaves and give it one final mix. 13: Serve it hot with rice, dosa or idli.View original recipe
