Instructions
1: Bring water to a boil and cook the noodles as per the instructions on the pack. 2: Strain the noodles, add some oil to prevent the noodles from sticking to each other. 3: Add all the coconut and cashew to a blender with some water and grind into a fine paste. 4: In a pan, add coconut oil, add the sliced onion and saute for a minute. 5: Add the curry leaves and continue to saute. 6: Add the chopped mushrooms and cook for 2 minutes. 7: Add the Cookd Chettinad masala and tomato ketchup. Cook this for a minute. 8: Add the coconut paste and mix well. Add salt and lemon juice. 9: Add the cooked noodles and mix without breaking the noodles. 10: Add some more salt & black pepper powder (if needed) & coriander leaves, mix well and remove from the heat and serve hot.View original recipe
