Avial is a quick and easy dish perfect for Onam, featuring a mix of vegetables like carrot, beans, raw banana, potato, and yam, combined with a delicious coconut-based paste. It's versatile enough to be enjoyed with anything.
For the paste, combine the grated coconut, cumin, shallots, garlic, turmeric powder, and green chilli and make a coarse paste. Then add the curd and blend until just combined.
Add all the vegetables to a pressure cooker along with turmeric, salt, and 1/2 cup of water. Cook for 1 whistle.
Allow the pressure to release naturally before opening the lid.
Bring the cooker back on the stove and reheat the vegetables.
Add the paste and stir. Cook for only 1 minute.
Add curry leaves and coconut oil on top, cover with a lid and turn off the stove. Let it sit for 2 minutes.
Avial is ready to be served with rice or Adai.
