Instructions
1: Prepare the stuffing by grinding peanuts, coriander seeds, cloves, cinnamon, black peppercorn, green cardamom, fenugreek seeds, sesame seeds, grated coconut, garlic, ginger, and onion together. 2: Add turmeric powder, red chilli powder, and salt to the stuffing mixture. 3: For tamarind extract, soak tamarind in hot water and prepare a paste. 4: Cut brinjals and stuff them with the prepared stuffing. 5: Heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves. 6: Add finely chopped onion and sauté until golden. 7: Place the stuffed brinjals into the pan, add water, adjust salt, and cook until they are soft. 8: Add Kashmiri red chilli powder, turmeric powder and jaggery. 9: Garnish with coriander leaves before serving.View original recipe
