Enjoy a burst of spice and flavors with this homemade Prawns Pickle! Prawns marinated in spices, blended with roasted pickle powder, and combined with shallots, vinegar, and curry leaves for a perfect condiment.

1: In a mixing bowl add the prawns, red chilli powder, turmeric powder and salt, mix it thoroughly and let it marinate for 30 minutes. 2: Dry roast all the ingredients for the pickle powder and blend it into a fine powder. 3: Blend the shallots into a fine paste with ginger garlic paste and set aside. 4: In a kadhai pour oil, once hot add curry leaves, shallot paste and cook until the raw flavour disappears. 5: Add the marinated prawns to the pan and cook for 2-3 minutes, then add red chilli and turmeric powder along with the roasted pickle powder and cook for a minute more. 6: Pour the vinegar, boil it, and cook for 2 more minutes. 7: Cool down the pickle, jar it and store it in a fridge.
