1: Wash the rice and soak for 15 minutes. Meanwhile, prepare the rest of the ingredients. 2: In a pressure cooker, heat ghee and add all the whole spices. 3: Add the onion and green chilli, then sauté until the onion turns translucent. 4: Add the ginger-garlic paste, red chilli powder, coriander powder and salt. Sauté for 2 minutes. 5: Add the beetroot, mint, coriander leaves, sugar and vinegar. Sauté for a minute. 6: Add the rice and water. Mix and pressure cook for 2 whistles, turning the heat to low after the first whistle. 7: Fluff up the rice and serve warm with raita.
