Watermelon Peel Curry

A delicious and unique curry made using the rind of watermelon. The peel is marinated with spices and cooked with various ingredients like peanuts and tomatoes to create a flavorful dish that's best served with chapathi or rice.

1: Peel the green outer skin of the watermelon rind and cut it into cubes. 2: Marinate the watermelon rind with ginger garlic paste, salt, turmeric powder, red chilli powder, and curd. Set aside. 3: Heat oil in a pan and add the peanuts. Fry on medium-low heat until golden brown and set aside. 4: In the same pan, add mustard seeds and cumin seeds. Once it crackles, add dry red chilli and garlic. Saute for around 30 seconds. 5: Add onion and curry leaves. Saute until the onion turns translucent. 6: Add coriander leaves, red chilli powder and salt. Saute for a minute on low heat. 7: Add tomato and saute for 3-4 minutes until it softens. 8: Add the marinated watermelon rind and mix well. Cover and cook on medium heat for 15 minutes, stirring occasionally. 9: Add water and bring to a boil. 10: Add garam masala powder and mixed coriander leaves and fried peanuts. Serve with chapathi or rice.
