1: Prepare the ingredients: finely chop cabbage and mushrooms, and set aside. 2: In a bowl, combine cabbage, mushrooms, maida, cornflour, rice flour, ginger garlic paste, salt, and red chilli powder. 3: Mix well until all ingredients are coated. 4: Heat oil in a deep frying pan. 5: Once the oil is hot, drop spoonfuls of the mixture into the oil and fry until golden brown. 6: Remove from the oil and drain on paper towels. 7: In a small bowl, mix onions, coriander leaf, and curry leaf for garnish. 8: Serve the Kaalan hot, garnished with the onion mixture along with soy sauce, tomato ketchup, and green chilli sauce.
