A rich and creamy Sultani Dal that's smoky and a regal delight, making your day brighter. This comforting dish is perfect served hot with rice or roti.

1: Wash the dal till water runs clear and soak for 30 minutes. Strain it and put it in the cooker. 2: Add 1 cup of water, 1 tsp salt and ½ tsp turmeric powder and cook it for 3-4 whistles. 3: Take it off the flame and let the pressure reduce gradually and open the lid. 4: Mix the dal well and add milk, cream and curd to it and mix it well. 5: Cook it on a low flame till the mixture thickens. Turn off the flame. 6: Place a small bowl with a hot piece of coal on top of the dal. Add a tablespoon of ghee and close the lid immediately. Leave it for 5-7 minutes and then take the coal out. 7: In another pan, heat 2 tbsp oil, add cumin seeds, garlic, dry red chillies and let it crackle. 8: Add the chopped onions and cook it to a golden brown color. 9: Turn off the flame and add the red chilli powder and mix it well. 10: Transfer the dal mixture to the tadka, mix it well. Check the seasoning. 11: Top it off with a tablespoon of ghee. Garnish it with coriander sprigs and serve hot with rice or roti.
