1: In a pan pour oil and add all the dried herbs, carrot, onion and leeks, sauté until aromatic and add the tomato paste. 2: Cook until the raw flavour disappears and add potatoes to give it a good mix. 3: Add all the masalas and sauté, once they turn aromatic add the lentils and give it a good mix. 4: Pour water, cover and simmer for 20 minutes, once the lentils turn soft add spinach and cook until they wilt. 5: Garnish with coriander leaves and serve hot.
