A vibrant dish made with raw rice and carrots, enhanced with spices and cashew nuts. Perfect for a colorful plate.

1: Wash and soak the rice for 20 minutes. 2: Heat a cooker, add oil. 3: Add mustard, cumin seeds, dry red chillies, curry leaves and let it crackle. 4: Add the cashew nuts and saute for a few seconds. 5: Add the chopped onions and saute till it turns translucent. 6: Add ginger garlic paste and saute for a few seconds. 7: Add turmeric powder and the grated carrots and mix well for 2-3 minutes. 8: Add water and salt. Mix well and bring it to a boil. 9: Add the soaked and strained rice. 10: Cover and pressure cook for 4 whistles. 11: Turn off the flame and let the steam reduce gradually. 12: Open the cooker, fluff the rice and serve it hot.
