A unique coconut curry made using banana peels, which adds flavor while reducing waste. It's easy to prepare and perfect to enjoy with rice, dosa, or idli.

1: Cut the banana peels into strips. 2: Soak the peels in hot water for 10 minutes. 3: Heat a pan and add coconut oil. 4: Add mustard, cumin, fennel, green chillies, curry leaves and let it splutter. 5: Add the onions and saute till they turn light brown. 6: Add ginger garlic paste and saute for a few seconds. 7: Add tomatoes, turmeric powder and saute till tomatoes become soft and mushy. 8: Add the banana peels and saute for 2 minutes. 9: Add water and bring it to a boil. 10: Cover and simmer the mixture for 10 minutes. 11: Open the pot, add the coconut paste and mix till it combines and thickens. 12: Season the curry, add coriander leaves and give it one final mix. 13: Serve it hot with rice, dosa or idli.
