Palada Payasam is a delicious traditional dish made with rice ada, milk, sugar, and condensed milk, prepared in a simplified way to achieve the rich taste and color within a shorter cooking time.

1: Boil 2 cups of water in a saucepan. Turn off the heat and add the Ada. Cover with a lid and let it sit for 30 minutes. 2: In a pressure cooker, add the milk, sugar, and ghee. Pressure cook on high flame for 1 whistle. Immediately after the first whistle, reduce the flame to low and cook for a further 20 minutes. 3: Strain the Ada and wash it until it is not sticky anymore. 4: Add the Ada to a pan along with the reduced milk. Cook for a further 15 minutes on medium flame, or until the mixture has reduced significantly. 5: Add the condensed milk and bring to a boil. Turn off the flame.
