A delicious Poricha Kootu made with a blend of vegetables and a flavorful paste using urad dal, grated coconut, and spices. Perfect for a hearty meal.

1: Roast the urad dal until golden brown, then add the dry red chilli and saute for 10 seconds. 2: Turn off the flame and add grated coconut and cumin seeds, give it a good mix and blend into a fine paste (add water if needed). 3: In a pressure cooker add moong dal, turmeric powder, water and drumsticks. 4: Pressure cook for 3 whistles on a moderate flame and set aside until the pressure releases. 5: In a kadhai add the boiled dal and chopped vegetables, add salt and cook until the vegetables are tender. 6: Add the ground paste and curry leaves and cook for 2 minutes or until the raw flavour disappears. 7: In a tadka pan add oil, mustard seeds and let it crackle, add urad dal after that and add it to the kootu.
