A delicious and nutritious Vendakkai Peanut Fry that combines the flavors of lady's fingers with roasted peanuts, spices, and herbs. It's a comforting dish that pairs well with rice.

1: Heat oil in a pan and add the peanuts. Fry on low flame for 3-4 minutes or until golden brown and crispy. Remove from the pan and set aside. 2: In the same oil, add urad dal, chana dal, dry red chilli, garlic, and curry leaves. Then add the lady’s fingers and mix. 3: Add salt and lemon juice, and cook for 5 minutes on high heat without covering the pan. 4: Add turmeric powder, coriander powder, and cumin powder. Sauté for 5 more minutes on medium heat. 5: Add the fried peanuts and red chilli powder. Cook for 2 more minutes, then remove from heat and serve with rice.
