This cheesy Chicken Margherita is perfect for cheese lovers, featuring chicken breasts topped with a flavorful tomato and basil sauce and melted mozzarella cheese. It's a delightful dish to serve hot.

1: Score and blanch the tomatoes, keep them in ice cold water. Peel the skin, deseed it and chop it into chunky dices. 2: Heat olive oil in a pan, add garlic and saute it for a few seconds. Add the basil and cook it for a few seconds. 3: Add the chopped tomatoes and saute for a minute. 4: Add the tomato puree, mix it well, add water, bring it to a boil. Cover and simmer the sauce for 25 minutes, stirring occasionally. 5: Heat oil in a non-stick pan, sear the chicken to a golden brown colour on both sides. 6: In a baking dish or skillet, apply sauce at the base, place the chicken over the sauce. 7: Generously add mozzarella cheese on top. 8: Place a roundel of tomato on each chicken breast, sprinkle julienned basil on top. 9: Bake it in the oven till the cheese is gratinated. 10: Serve it hot.
