Burmese Egg Bhejo is a delightful dish that transforms hard-boiled eggs with a flavorful stuffing of fried onions, garlic, and dried red chilies, enhanced with tamarind and lemon juice. It combines sweet, sour, and spicy elements, making it a unique way to enjoy eggs.

1: Soak the tamarind in hot water for at least 15 minutes. 2: In a pan, heat the oil. Add the sliced onions and fry them until they turn golden brown. Remove them from the heat. 3: Add the sliced garlic and remove them and set aside, as soon as they turn golden brown. 4: Fry the dried red chillies for a few seconds until they barely start to darken. Set the chillies aside. Blend the fried chillies into flakes. 5: Reserve the oil for later use. 6: Combine the fried onion, garlic and chilli flakes. 7: Mix the salt with water until the salt has dissolved. 8: Slit the boiled eggs halfway through. Stuff the fried onion mixture into the egg. 9: Pour in a teaspoon of the tamarind extract and the salt mixture, a teaspoon of the remaining oil and a few drops of lemon juice. 10: Garnish with a few sprigs of coriander leaves.
