1: In a mixing bowl add day old basmati rice and mix the egg yolks. 2: In a wok/kadhai pour oil and add shallots, green chillies and garlic and saute for 30 seconds. 3: Add cabbage, beans and sweet corn and saute for 30 seconds and push all the veggies to one side. 4: Add egg whites and scramble, mix it until thoroughly combined. 5: Add finely chopped capsicum, spring onion bulbs and carrot and saute for 1 minute. 6: Push the mixture to one side and add the egg yolk and rice mixture. 7: Cook until the grains separate and mix together. 8: Add salt and garnish with spring onion greens and serve.
