A quick and delicious Egg Roast recipe that makes for a perfect side dish for weekday lunches. This recipe includes boiled eggs coated in a flavorful masala made with mustard seeds, onions, and spices.

1: Add eggs to a saucepan, and cover the eggs with water. Bring the water to a rolling boil, cover and continue to boil the eggs for 9 minutes. 2: Score the eggs on the sides for the masala to seep in. 3: In a pan, heat the oil and add mustard seeds. 4: Add finely chopped onion and cook until the onions turn brown. 5: Add Red Chilli Powder, Turmeric Powder, Cumin Powder and salt. Mix well and continue to cook for a minute. Add some water. 6: Add the boiled eggs and some curry leaves. 7: Mix well until the masala coats the egg and stir gently for 2 minutes.
