1: Heat oil and add mustard seeds, allow it to splutter. 2: Add cumin seeds, asafoetida, dry red chilli, curry leaves, ginger, garlic and green chilli. Saute for a few seconds until aromatic. 3: Add onion and saute until it turns translucent. 4: Add turmeric powder, red chilli powder, garam masala powder and salt. Saute for 30 seconds. 5: Add sugar and cooked rice. Toss for 2-3 minutes. 6: If needed, add more salt to the rice. 7: Finish with coriander leaves and lemon juice. Give it a final toss and serve.
