1: Combine the ingredients in the spice mix to prepare the Piri Piri masala. 2: Cut the potatoes into wedges with skin-on and rinse them in cold water. 3: Add them to water and bring it to a boil with salt and baking soda. Bring to a boil and drain them. 4: Transfer them to a cloth and air dry completely. 5: Once completely dry, transfer them to a bowl. 6: Then add the cornflour and some of the spice mix and toss to mix well. 7: Deep fry them in medium hot oil until golden brown and crispy. 8: Toss again in the spice mix and serve.
