1: Heat oil in a kadai, add mustard, cumin, green chilli, and curry leaves. Let it crackle. 2: Add the sliced onions and sauté till it turns golden brown. 3: Add ginger garlic paste and sauté for a minute. 4: Add the spice powders and sauté till it loses its raw flavour. 5: Add the tomatoes and let it cook till it is mashed and oil is released from the sides. 6: Add ¼ cup of water, mix it well. Season it with salt and sugar. 7: Add chopped coriander leaves. Mix it well. 8: Transfer it to a bowl, serve it hot with dosa/idli, rice, chapati etc.
