1: Cook the noodles as per packet instructions, boiled in salted water with oil for 4-5 mins until tender but not overboiled. 2: Cut all the vegetables as mentioned in the ingredient section. Combine all the sauces and seasoning and set aside. 3: For the preparation, heat oil until almost smoking in a wok, add the ginger, garlic and green chillies, sauté until the garlic starts changing colours. 4: Add all the vegetables into the wok and sauté on a high flame for around 2 mins, add the sauce and mix well. 5: Cook further for 2 mins until the vegetables are tender but still crunchy. 6: Finally, add and toss the noodles gently. Finish with the spring onion batons.
