Easily made at home and better than store-bought chips, this Potato Chips recipe is simple and delicious. Using starchy potatoes, you can create crispy chips that will surely disappear in seconds.

1: Use starchy potatoes for frying. Peel the potatoes. 2: Slice them thin using a slicer/mandolin. Soak them in cold water for 5 minutes. 3: Lay them out on a cloth and pat them until they are dry. 4: Mix the salt and water together until dissolved. Set it aside. 5: Heat oil in a Kadai until very hot. Fry the chips in batches, allowing to fry for 2 minutes before stirring gently. Add a teaspoon of the salt mixture around the pan. 6: Continue frying until the bubbles subside and the chips become crisp. The entire frying process should be on high flame. Transfer the chips to a large bowl. 7: Sprinkle chilli powder while tossing continuously. Once cooled down, transfer it to an airtight container or consume.
