This Homemade Fruit Jelly is simple to make and so much fun to eat. Made with pineapple juice, sugar, and cornstarch, it sets beautifully in the fridge coated in desiccated coconut. Flavours like orange and cranberry can be added too!

1: Add the pineapple juice in a pan and add 2 tbsp of sugar and ¼ Cup of cornstarch. 2: Whisk the mixture to combine well. 3: Place on a flame and cook while stirring continuously until thick in consistency. 4: Pour the mixture into a parchment paper lined tray greased with oil. 5: Refrigerate for 4-5 hours until set and firm. 6: De-mold and coat with desiccated coconut. 7: Cut into small squares and coat individually with coconut on all sides.
