1: Soak the chana overnight or for at least 12-15 hours. 2: Drain the water. Add it into a food processor/mixer along with onion, garlic, coriander leaves, mint leaves, parsley, salt, cumin powder, black pepper powder, and coriander powder. Grind it into a coarse mixture. 3: Chill in the refrigerator for at least 30 minutes. 4: Add baking powder and mix again. Adjust the consistency with Maida. 5: Shape into balls/patties. 6: Fry them in oil until they turn brown and crisp on the outside. 7: For cooking tips, make a trial piece to ensure the oil temperature is correct.
