Kerala Style Onion Vada is a perfect tea time snack made with thinly sliced onions, curry leaves, ginger, and a blend of spices. It's a delightful monsoon snack, crispy on the outside and flavorful on the inside.

1: To a bowl, add the onion, curry leaves, ginger, green chilli, fennel and salt. Rest for 10 minutes. 2: It will start to release moisture. Add turmeric powder, red chilli powder, sugar and garam masala powder, and mix. 3: Add the rice flour and maida and mix. Add the maida one tablespoon at a time. Add more if the mixture is still too wet, and is not holding shape. 4: Heat oil to medium-high heat. Shape the onion mixture into balls, around the size of a large lemon. Fry for 3-4 minutes. Remove from the oil when the colour just starts to turn light golden brown. 5: Turn the oil temperature up to high. Add the cooled Vada and fry again until it turns a perfect golden brown. Remove from the oil and serve with hot tea.
