1: Peel potatoes, put the skins in a bowl of water with salt and wash them thoroughly. 2: Take out the potato skins, spread them evenly on a tray and let them dry for 6-7 hours. 3: Heat oil in a kadai, Deep fry the potato skins till they turn golden brown and crispy. 4: Transfer the Fried Potato skins to a bowl. 5: Prepare a seasoning with salt, pepper, paprika, garlic powder and parsley and add it to the fried potato. 6: Toss it till it mixes evenly with the potatoes. 7: Serve it hot with a dip or tomato ketchup on the side.
